-1 lb of ground beef
-small onion, chopped
-2 cloves garlic, minced
-1 1/2 to 2 tsp oregan
-1 tsp basil
-salt & pepper to taste
-14.5 can diced tomatoes with garlic, oregano, & basil
-6 oz tomato paste- I only use 3/4 of the can
-2 (6 oz) tomato sauce
-1 1/2 cup cottage cheese
-1/4 cup Parmesan cheese
-2 eggs beaten
-1 1/2 tbs parsley ( I use the dry kind but fresh would be better)
-9 oven ready lasagna noodles
2 (8 oz) packs of mozzarella cheese
1.) Cut the onions and mince the garlic and cook with the hamburger until no longer.
2.) After draining, add the diced tomatoes, tomato sauce, tomato paste, and seasonings.
3.) Cook on low for 30 to 45 minutes.
4.) While the meat sauce is cooking, you will want to make the cheese mixture to have it ready to go for the layering part. Beat the two eggs and add the parmesan, cottage cheese, and parsley.
5.) Preheat the oven until to 350.
6.) Once the meat sauce is done, you will need a cake pan to start layering the lasagna. Add about 1/4 of the meat sauce to the bottom of the cake pan, then place three noodles uncooked on top. I do three noodle and make sure to not overlap them.
7.) Next is the cheese mix and then the mozzarella and continue layering ending with sauce. So, the order is sauce, noodles, cheese mix, mozzarella.
8.) Bake for 40 minutes. Add mozzarella cheese to the top and cook another 5 to 10 minutes.
So, above is the finished product! And you happen to try this I did forewarn you this takes FOREVER but it is oh so good!
