Pinned and Tried

This past weekend, I tried this cheese dip.  I pinned this a few weeks ago and it is Cowboy Queso.  It is from Plain Chicken's website.  I have never tried any of her recipes but I have always drooled over her food and they are always on Pinterest so I was pretty pumped about trying it.  I would call myself a cheese dip connoisseur and most cheese dips don't ever wow me.  There is something about the way Mexican restaurants make cheese dip, they always get it right and I can never make cheese dip better than what I have had at the restaurants.

I would say hers looks a lot better than mine but it was not as good as I wished it was.  Don't get me wrong, it was yummy and better than a lot of cheese dip recipes but it still was not as good as I wished.  I would recommend it it you love beans and the extra kick from the hot sauce was right up my alley.  One pro was that the site included a microwave version of the recipe and it was super fast.  I don't know why I never thought of just microwaving cheese dip but now my life is changed!  Below is the recipe I copied and pasted fro the website.

Cowboy Queso

  • 1 lb lean ground beef
  • 1 Tbsp dried onion flakes
  • 1 (15oz) can chili beans, undrained
  • 1 (15oz) can black beans, rinsed and drained
  • 1 (10oz) can Rotel tomatoes, undrained
  • 1 cup frozen corn, thawed
  • 1/2 cup milk
  • 1 Tbsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp hot sauce
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin
  • 16 oz Velveeta, cubed

Microwave Directions:
In a large skillet, cook ground beef until no longer pink. Drain fat.

Place beef in a large microwave safe bowl. Add remaining ingredients, stir. Microwave on HIGH for 4 minutes, stir. Microwave on HIGH for an additional 4 minutes, stir. Continue microwaving in 1 to 2 minute intervals until cheese is melted and dip is thoroughly heated. Serve immediately.

Slow Cooker Directions:
In a large skillet, cook ground beef until no longer pink. Drain fat.

Place cooked beef in slow cooker. Add remaining ingredients and stir. Cook on LOW for 2 or 3 hours, until cheese is melted. Serve with chips.

Baby Boy Nursery Inspo

When I want to plan something, I become obsessed and that is what's on my mind ALL THE TIME!  Right now, it is the baby's nursery. Before we found out it was a boy, I had it in my mind that I wanted to do either a sports or superhero theme.  Now that we know what it is, I decided on a superhero theme.  I have so many ideas and have been a pinning fool lately.  Here are some ideas I have so far.

I bought some superhero prints on Etsy from a shop called Kawaii Kids Design.  I am going to print them off at Target and put them in 8 x 10 frames. 
I know I want to do two of the walls across from each other with white and grey horizontal stripes and then do the wall where the crib would be with a city scape like the picture above. The last wall is mostly the closet space so that wall will just be white.  With the grey and white, I can change the decor and theme really easily when he grows out of superheros.  I also found the crib, changing table and dresser I want which it below.  I found them all at Ikea and I love how the changing table can change into a desk when he gets older.  I hate the idea of buying furniture that will only be used the first couple years so I am super excited about it!

With all the colors,it can easily get to be too much so I am trying to keep all the furniture and walls neutral so it does not become too much.

Another Weekend Bites the Dust

Another weekend has came and left and I am thinking about how much I am dreading going to work tomorrow!  I can't complain though, at least I have a job to go back to.  I keep telling myself that anyways. :)  We did not do much outside the house other than errands but sometimes those are the best weekends.  

After work Friday, Chloe and I went to Burlington Coat Factory and did some baby shopping.  I have been on the look out for summer clothes for baby since he will arrive in Spring.  Most places are slowly bringing out the Spring and Summer collections but I don't buy clothes until they go on sale or clearance which does not happen until after a while so I have not bought any but Burlington Coat Factory always has cheap clothing and I scored on a few Carter outfits.  I also got Chloe a couple pairs of shorts and shirts for summer.  We visited at my moms and Aunts house until about 930 and then we went home with a few extra kids in tow.  Chloe's big cousins spent the night with us which meant I got a lot of cleaning done!  

After we took the girls home Saturday, Chloe and I went grocery shopping and spent too much money as usual.  Why are groceries so damn high!?  I cannot imagine how much our shopping trips will be when our little boy enters the world and starts eating real food!  After that, we ran a few errands.  We stopped by Ulta and I got me a few goodies as well.  I got a few of the new Suede Lipsticks from the Nyx brand and they had Real Technique Makeup Brushes buy one get one free so I got a couple new brushes.  When we got home, I made some tacos and Chloe wanted to make a pizza.  We got a little fancy and used a little heart cookie cutter for the pepperonis.  

Sunday was as chill as it gets for us.  Chloe and I cuddled and ate some donuts while Daddy slept n.  We had a little silly photo shoot in between!  I finished up some laundry and got some pulled pork going in the crockpot and then headed to Walmart to get Toy Story.  Chloe has been interested in the characters for a while and we have been slowly trying to buy all the Disney and kids movies we have watched as kids.  We had a little movie day and made hot chocolate and popcorn.  You really cannot beat this kind of day!

6 Month Update

How far along: 24 weeks
Total weight gain: 18 lbs
Maternity clothes: I just got three new pairs of maternity pants over the weekend and I am the happiest girl not having to rig up a ponytail contraption like I have been with my non-maternity pants.  I don't think my shirts are going to last much longer though, you can only pull them down so much!
Stretch marks: Not yet!
Sleep: Sleeping too good.  By the end of the day, I am ready to hit the sack!
Best moment of this week: Buying new baby clothes.  We got these cute little superhero onesies with capes on the back!  I about died when I saw them!  Eric felt the baby move for the first time too!
Miss anything: Dreaming of starting my day with coffee and ending it with wine!
Movement: Yes, lots of it!  When this baby moves, he MOVES!
Food cravings: Turkey Sandwiches!
Anything making you queasy or sick: No thank God.  Sickness ended after the first trimester.
Have you started to show yet: Yes, baby has popped out and I feel like I am bigger with this one at this stage.
Labor signs: No
Belly button in or out: In still!
Happy or moody most of the time: I have been getting little waves of depression but I am trying to stay positive through them.
Looking forward to:  The nursery!

2015 in Review

I am a little late on doing this post but I have been seeing so many people post their 2015 reviews and I have loved reading them so I decided to copy!  To be honest, 2015 was a year that tested my strength emotionally and was a really hard one on my family but then again God pulled up through and that to me is something to be grateful for especially being someone who has not had to go through many major hardships in life.  We had a lot of health issues with my aunt and almost lost her a few times and then found out my mom has Stage 4 Colon cancer  but then we also found out we were expecting our second child and not only that, we we were expecting our first boy!   Those are def two different side of the emotional spectrum but that is life right!?

First off, we started going to church again in 2015 where we had our first meltdown of the year.

I turned 26 and brought up frequently I was now in my late 20s!  In true mommy life, Chloe got the first bite of my cake!

We accomplished potty training Chloe a month after turning 2.

My young boyfriend caught up to me and turned 27 also!

We celebrated Valentine's Day.  Chloe painted her own toes/nails and tattoos for the first time.

 Alot of dressing ourselves and wearing multiple skirts and dresses every day.

We went to the zoo and celebrated ST Patty's Day.

We got rid of the crib and got Chloe a toddler bed and made a few tweaks to her new big girl room,

Easter and the Easter Bunny came.

Eric started a new job where he is gone a lot.  It was def a test but we are getting used to it!

Mother's Day came and momma got spoiled.

 We swam, played, and had all kinds of summer fun.

We celebrated the best Daddy on  Father's Day.

We celebrated The Fourth with friends.

Chloe had her first Build a Bear experience.

My blog hiatus started.

We found out we were expecting a 2nd addition!

Our journey began with my mother's cancer journey,  We did not know for sure if it was cancer but we found out she had a lot of spots on her lungs and liver.

My blog hiatus ended and I announced on my blog we were expecting.

We found out that my mom did indeed have cancer.

We did lots of Fall activities and celebrated Halloween.

Chloe experienced her first Royals baseball game.


I found out the worst news of my life.  After a few more tests and scans, we found out my mother has Stage 4 Colon Cancer and started her chemotherapy treatments.

We celebrated Thanksgiving and although this one was different because my mothers diagnosis, I was grateful to be able to spend it with my mother.

Our ultrasound appointment was one of the highlights of this month and the whole year because we found out baby #2 is a boy!

We took Chloe to her first movie "The Good Dinosaur" and she did soooo good!

We celebrated Christmas.

Chloe turned the big 3!

We celebrated with a Lego Land Party.

Even with all the bumps in the road, we left off 2015 on a good note.   Even though no New Year's Resolutions are being made by me this year, I am entering 2016 with hope and being grateful that I can do just that.

Pinned and Tried

I am one of those people that actually try the recipes I pin and a lot of my family's favorite meals came from Pinterest so I decided to document them on my blog.  You always see recipes on Pinterest claiming to be the best this and that  which always catches my eye since I am the most gullible person out there and then I am pissed when they do not turn out good!  And then there are the recipes that look so easy and fun but are way harder than you thought.  I had been wanting to to try this Crockpot Beef Stroganoff recipe for a while so I made it this weekend.  There was no picture of the final product on the website making it even more up in the air but it did say The Absolute Best so of course I believed it!  I also like to look at the comment sections to see if anyone says they have tried it and there were a few ppl that commented they tried it and liked it.  So, this is what my turned out looking like. I served it with homemade garlic cheese bread and steamed veggies.
The Verdict:
If my boyfriend who is super picky eats his whole plate then it is a win and he did with this meal.  Even Chloe ate some and liked it.  I thought the sauce was very savory and the beef tips were so tender from cooking in the crockpot.  I made them on high because I was in a rush but I am sure cooking this on low would make it even better.  The only complaint I had was that you could see specs of cream cheese in it because it did not melt all the way.  It did not affect the taste but it was a mental thing!  I do recommend this and I will be adding this to my recipes and we will be making this again!

Crockpot Beef Stroganoff Recipe
2 lbs cubed beef tips
 2 cans Condensed Golden Mushroom Soup
1 onion
3 to 4 tbs of Worcestershire 
1/2 cup water
8 oz cream cheese
couple dashes of garlic salt
couple dashes of paprika

1.) Add everything to the crock pot except the beef tips.
2.) Mix together and then add the beef tips. 
3.) Cook on low 8 hrs.
4.) Cube the cream cheese and add to the crock pot,
5.) Put on high and cook about 10 min.

We Have a Three Year Old?!

Even though I am still not sure where time has gone, there is no denying the fact we have a three year old!  The night (December 31) that was reserved for partying, drinking, and ringing in the New Year changed three years ago when our precious girl was born.  We had a three day weekend and literally celebrated all weekend,  We went to Powerplay, to see Alvin and the Chipmunks, the playground, and then had her birthday party Saturday at Lego Land.

Chloe loved opening her presents and was climbing on the table to get to them because I just wasn't grabbing them fast enough for her!  Everything turned out perfect and it was nice to not have to worry about planning everything and just sit back and let our "party assistant" do everything.  I was impressed with the room, staff, and most important, the kids had a blast.

I am pretty happy with how the weekend went and I know Chloe had a blast.  With or without my permission, Chloe is growing and getting older so as much as I am sad about her getting older. I am also loving it.  The things she does and says make my day and she makes my heart melt.  Happy Third Birthday to my Doll baby!
